What is za’atar? Za'atar in Arabic is زَعْتَر. It's also known as Syrian marjoram, and it's possible the Bible refers to it as hyssop. It's an herb, an herb blend, and a savory staple in Middle Eastern foods. We're proud to bring you this excellent blend from the Nahle family's herb business in Ilabun, a village in the Western Galilee. The family's knowledge of growing herbs extends back generations, and the business is currently run by matriarch Fatina Nahle, who works closely with her son Nipho.

This za'atar is dried in the shade before being ground and blended with roasted organic sesame seeds, sea salt, sumac, and organic olive oil. 

How to use this delicious addition to your pantry? Try it on . . . everything savory! Sprinkle it in olive oil for a wonderful bread dip, use it as seasoning on seafood and meat, blend it with plain yogurt for a tasty dip for vegetables, or bake it into breads. It may very well become your favorite herb.

We're happy to purchase the Nahles' za'atar through Sindyanna of Galilee, an Israeli nonprofit led by women that promotes "business for peace" and fair trade. Their staff is made up of Arab and Jewish women who work side by side, bridging cultural and religious divides. Sindyanna's business also encourages sustainable agriculture and organic farming. Sindyanna uses its profits to promote education for Arab women.
